Broccolini, bacon and lemon pasta
- Cook the pasta in a saucepan of salted boiling water for 11 minutes, add the broccolini and cook for a further 1 minute.
- Drain and keep warm. Heat 1 Tbsp of the oil in a large frying pan over high heat.
- Add the bacon and cook for 3-5 minutes or until crispy. Add the garlic and lemon zest and cook for 1-2 minutes or until fragrant.
- Add the pasta, broccolini, parmesan, basil, salt, pepper and remaining oil and toss to combine.
Tip: Rigatoni is a ridged, tube-shaped, short pasta. You can buy it at supermarkets and Italian delicatessens.
