Salad of prosciutto, cherries, goat’s curd and vincotto
This is probably the easiest and tastiest salad you will ever make. You’ll have a picnic feast within 5 minutes or a sublime start to any dinner party.
Arrange prosciutto between 4 plates and scatter with cherries and rocket. Crumble goat’s curd over the top and drizzle with vincotto and olive oil. Serve immediately.
Vincotto is a nice, aged sticky balsamic. And a substitute for verjuice is half lemon juice and half good quality red wine vinegar/measure of verjuice. Or even a chardonnay or raspberry vinegar would also work well. Sabato stocks an extensive range of vincotto, you can get your verjuice there too.
