Orange honey cream caramels

Orange honey cream caramels

Honey and cardamom are a perfect marriage of flavours in this tangy variation of the classic French creme caramel. It’s better made a day or two in advance so that when you turn it out the dessert doesn’t stick to the bottom of the ramekin and the caramel ooze out. 

Ingredients

260 g Honey
1 Tbsp Water
4 Eggs
550 ml Milk
½ Orange, finely grated zest
½ tsp Ground cardamom

Directions

  1. Preheat the oven to 160C. 
  2. Heat two-thirds of the honey with the water in a small, heavy-based saucepan, stirring as the honey comes to the boil.  
  3. Reduce the heat to medium and watch carefully until it turns rich and golden. As soon as the colour deepens, remove from the heat and allow the bubbles to subside, then divide the mixture between 4 small ramekins. 
  4. Warm the remaining honey, whisk in the eggs until just combined, then whisk in the milk, orange zest and cardamom. Pour the mixture evenly over the honey caramel in the ramekins. 
  5. Place the ramekins in a bain-marie or roasting dish filled with water coming halfway up the outside of the ramekins, and cover the dish with aluminium foil. 
  6. Bake for 20-30 minutes until the custards are just set. Remove from the water bath, leave to cool, then refrigerate for 1-2 days. Remove from the refrigerator 1 hour before you are going to eat. Invert onto plates to serve.
