
Fresh fig rolls

Fresh figs and soft cheese are a special combo. Add some grilled bacon and use to fill a chunk of warm French bread and you have a very memorable lunch.
Ingredients
1 serving | French bread, warm, cut a generous chunk |
1 serving | Aioli, choose one flavoured with chipotle or mayonnaise flavoured with red pepper |
1 handful | Microgreens, or rocket |
3 rashers | Bacon, grilled |
1 serving | Buffalo mozzarella, sliced |
1 | Fresh fig, ripe, sliced |
Directions
Cut a chunk of warm French bread and spread it with a red pepper or chipotle mayo or aioli. Fill with a good handful of microgreens or rocket, grilled bacon, slices of fresh buffalo mozzarella and slices of fresh fig. Season with sea salt and fresh pepper.
