Apple, goat's cheese and herb pizza
A healthy pizza for two. I used the new variety of Sweet Tango apple.
|1 large||Red onion, thinly sliced|
|1 Tbsp||Olive oil|
|1 Tbsp||Balsamic vinegar|
|1 Tbsp||Brown sugar|
|1||Pizza base, 30cm thin base|
|1 small||Apple, peeled, cored and thinly sliced|
|150 g||Goat's cheese, broken into pieces|
|½ cup||Spinach, sliced|
|½ cup||Basil leaves, chopped|
|¼ cup||Parsley, chopped|
|1 Tbsp||Chopped rosemary|
|1 Tbsp||Extra virgin olive oil|
- Preheat the oven to 200C. Lightly oil an oven tray and place in the oven to heat.
- Gently sauté the onion in the oil, until softened. Stir in the vinegar and brown sugar. Cook on low until the liquid has evaporated.
- Spread over the pizza base. Top with the apple, goat’s cheese and spinach leaves. Bake for 20-25 minutes until the base is crisp. Sprinkle with the herbs and drizzle with the olive oil.
