- Cut strawberries into 5mm slices. Toss in a bowl with icing sugar, sherry vinegar and the zest of an orange (or lemon). Leave to macerate for 30 minutes, then freeze in a large freezer bag, turning often, for 1-2 hours.
- Place the frozen strawberries in a food processor and blitz until super smooth (use the juice of the orange to help get the blitzing process going). Pour in to a freezerproof container and refreeze until ready to serve.
