The process of maceration softens fruit, extracting their natural flavours whilst drawing out a deliciously sweet, jammy syrup. Warren Elwin macerates some strawberries.
- Slice 1-2 punnets of strawberries into quarters or eighths. Add the zest and juice of half a lemon, icing sugar and cardamom.
- Leave to do their thing at room temperature for 1-2 hours. Serve as they are with ice cream, as a topping for cheesecake and desserts, or as you wish.
