Baked goat cheese with tomatoes, thyme, rocket and sweet vinegar
- Preheat the oven to 180 degC.
- Core and slice the tomatoes into rounds. Lay on an oiled tray, season, and bake for 30 minutes.
- In an ovenproof dish, put the feta on top of the thyme and bay leaves.
- Drizzle with olive oil and a grind of pepper, then bake for at least 30 minutes or until golden.
- Drizzle over the vinegar and serve warm with rocket leaves and warm crusty bread.
