Gremolata the crunch

Warren Elwin has taken liberties, twisting the gremolata idea to create toppings to add a healthy zing and maybe a bit of crunch to almost anything.

Ingredients

1 cup Cheddar cheese, and parmesan, freshly grated
1 Tbsp Sesame seeds
1 tsp Poppy seeds
2 rashers Bacon, crispy crumbled or finely chopped
1 handful Chives, chopped
2 Tbsp Breadcrumbs

Directions

  1. Mix cheddar and parmesan cheese with sesame seeds, poppy seeds and some freshly ground black pepper.
  2. Spread out on baking paper and bake in a hot oven until bubbly and golden. Set aside to cool then crumble and mix with crispy crumbled or finely chopped bacon, chives and breadcrumbs.
  3. Serve sprinkled on soups, roasted vegetables and cooked greens to add some crunchy flavour, or sprinkle on to a batch of scones before baking.
