
Date and coconut balls

If you are anything like me, come 3.30pm you need something to munch on. These nutty balls are just the thing. They will boost your energy level enough to get you through the rest of the day and they make for a healthier alternative than a trek to the snack machine. Makes 10.
Ingredients
½ cup | Dates, soaked in warm water for 10 minutes |
½ cup | Shredded coconut |
½ cup | Rolled oats |
½ cup | Almonds |
½ cup | Sunflower seeds |
¼ cup | Craisins, or apricots |
1 Tbsp | Chia seeds, optional |
1 Tbsp | Runny honey |
1 Tbsp | Tahini |
2 Tbsp | Toasted sesame seeds |
Directions
- Place drained dates, coconut, oats, almonds, sunflower seeds, craisins, chia seeds, honey and tahini in a food processor.
- Pulse until well combined and starting to stick together. Roll into golf-sized balls.
- Sprinkle with sesame seeds. Cover and refrigerate until needed.

added 148 days agoThese are great. I use a few pieces of crystalised ginger instead of chia seeds, and also replaced tahihi with peanut butter - works well. I store them in the fridge.

added 1320 days agoQuick to make and tasted awesome! Can see these will be a good pick-me-up to get through the afternoon slog at work. Tip: you can buy a lot of these ingredients cheaper at bulk bin/asian food stores...
