Seasoned beef medallions with Asian coleslaw
( SERVES 2 )

|1 packet||Silver Fern Farms Beef Medallions|
|2 Tbsp||Vegetable oil|
|2 Tbsp||Hoisin sauce|
|2 Tbsp||Soy sauce|
|1 tsp||Sesame oil|
|½ cup||Beef stock|
Crispy Asian coleslaw
- Remove the medallions from the fridge and allow to come to room temperature. Rub the beef medallions with oil and season with salt and pepper.
- Heat a frying pan and pan-fry medallion for 2½-3 minutes each side. Remove and rest for 5 minutes. Deglaze pan with hoisin sauce, soy sauce, sesame oil and beef stock. Simmer until reduced and thick.
- To make the Asian coleslaw, combine all salad ingredients into a bowl. For the dressing, combine the dressing ingredients together in a jar and shake well.
- Add dressing and toss well.
