Roast beef deglazed with cranberries and balsamic vinegar

Silver Fern Farms suggests
- Remove the medallions from the fridge and allow to come to room temperature. Preheat oven to 200C. Rub the beef medallions with oil and season with sea salt and pepper.
- Heat the frying pan and sear roast on all sides. Transfer to a hot oven and bake for 20-25 minutes for medium rare. Leave to rest for 10 minutes before slicing.
- While the roast is cooking, soak cranberries in ½ cup boiling water for 10 minutes. Drain. As your beef is resting, add red wine, balsamic vinegar and cranberries to deglaze the frying pan. Simmer until thick and syrupy.
- Serve with mash and roasted vegetables
