Beef skewers with rice salad
( SERVES 3 )
Silver Fern Farms suggests
|2 tsp||Fresh ginger, grated|
|2 tsp||Lemongrass, finely chopped|
|2||Kaffir lime leaves, finely sliced|
|2 Tbsp||Sesame oil|
|¼ cup||Kecap manis, (sweet soy sauce)|
- Remove the stir-fry from the fridge and allow to come to room temperature. Combine marinade ingredients. Mix with the beef stir fry and leave for 30 minutes. Soak your skewers in water to ensure they don’t burn.
- Thread beef slices onto 6 skewers. Grill or barbecue for 2 minutes each side.
- To make the rice salad, combine all salad ingredients into a bowl. For the dressing, combine the dressing ingredients together in a jar and shake well. Add dressing to the salad and toss well.
To make the dressing: Combine the zest and juice of 1 lemon with 3 tablespoons of rice bran oil and 1/2 cup of sweet chili sauce.
