Almond milk jelly with kiwi fruit and passionfruit

- Dissolve the gelatine in the boiling water. Add the sugar and stir to dissolve. Mix in the almond milk and add the vanilla essence.
- Divide the pulp of one passion fruit between the 8 containers and cover with the almond milk mix. Sit containers in the fridge for a couple of hours to set.
- Peel and slice the kiwi fruit to garnish. Spoon out the pulp of the other passion fruit and store in a small container.
- Before leaving for the races, sit your puddings in a container and transport with the garnish fruits in your chilly bin.
