Ham scrambles with soldiers
These scrambled eggs are a one-dish wonder and cook in about 11/2 minutes in the microwave. Alternatively, you can cook in a pan on the stove.
- In a small bowl, whisk eggs and milk. Add ham and parsley, if desired, and season well.
- Heat on full power for 1 minute in the microwave, then carefully remove and stir gently to break-up the egg.
- Cook for a further 30 seconds until the egg is just set. Serve with toast.
Tip: For variety, add a few extras, such as chopped shaved ham, grated cheese, spring onion or chopped cherry tomatoes.
