Smoked chicken and raspberry salad
It makes a light lunch dish all by itself or can be a special salad to take to a barbecue.
|2||Baby cos lettuce|
|1||Smoked chicken breast|
|2||Radishes, or 3, thinly sliced|
|¼||Cucumber, thinly sliced|
- Shred or slice the chicken into thin strips. Arrange the cos lettuce leaves on a large platter.
- Top with the chicken, then dot with ¾ of the berries, radish and cucumber slices.
- For the dressing: combine the ingredients and remaining raspberries (give them a squash to release their juices) in a jar and shake well.
- Drizzle over the salad just before serving.
