This is a go-to in my pantry! Traditionally, it is steamed in a dish called a “couscoussier” over fragrant simmering meat or vegetables, but as time is precious, it’s easily prepared with boiling water.
- Combine couscous in a glass or stainless steel bowl with oil and boiling water.
- Cover tightly with a plate or lid and leave to absorb for 5 minutes, and then fluff with a fork.
Tip: As it has a mild earthy flavour, you can use stock instead of water and add spices, herbs, salt and zest. Try mixed with roasted vegetables as a salad or as a base for BBQ meats, as a stuffing, or stir into soup to thicken.
