Avocado and prawns on toast

- Mix together prawns, the zest and juice of 1 lime (or lemon), grated ginger, some freshly chopped dill and a little olive oil. Leave to marinate.
- Mash together the avocado, crushed garlic, chopped coriander and the remaining lime zest and juice.
- To serve, pile avocado on toasted slices of french bread, top with prawns, 1 or 2 per slice depending upon size.
- Sprinkle with flaky sea salt and freshly ground black pepper.
