Spring reader recipe competition: winner
Winning recipe: Spring snapper and broadbean sandwiches.
The Bite judges say: We loved the simplicity of James Siddle's sandwich/burger – who doesn’t want to eat a freshly-caught, fried snapper sarnie! And the broad bean puree looks and tastes great. View all of the winners.
Slow-cooked competition: The winning recipe
This Mas ismoru (beef smoore) recipe won our recent slow-cooked reader competition. It was submitted by Bite member Caroline Longley. The basis for the recipe, Caroline said, came from Charmaine Solomon's The Complete Asian Cookbook. She added: "I've adapted it for the slow cooker and changed the ingredients to things I find readily available from our Asian grocery shop (shout out to Lim Chour Manukau). It has minimal preparation unlike some slow cooker recipes that require pre-browning, yet turns an inexpensive cut of meat into something special. If you wish to go all-out, complete the optional frying stage in step 5 to add colour and depth, but the dish is delicious regardless."
The judges said: "We tried many delicious dishes but we kept coming back to this one. This cross between a pot roast and a curry was beautiful to eat — the meat was soft and succulent with plenty of tangy, rich sauce. It can be served more elegantly than curries containing chopped meat and makes a nice change."
Seafood competition: The winning recipe
Congratulations to Isabelle Russell who submitted the winning seafood recipe in our Snapafest competition. Check out Isabelle's Kiwi take on a tradtional Brazilian fish stew here or enjoy some of favourites from the competition in our Collection here.
Oven bakes competition: The winning recipe
Big hearty congratulations goes to Sherene Newby, with her winning recipe for lamb bobotie. Bobotie is a traditional South African dish with curried mince, and Sherene has given it a delicious Kiwi twist by using New Zealand lamb. You can find her recipe here, and some of the other entries to the competition here.
