Reader recipe: Avocado with macadamia nuts

The combination of flavours (creamy avocado, crisp buttery macadamia nuts, sweet dates, and bitter watercress, drizzled with slightly tart pomegranate molasses is a spring wake-up for the taste-buds! This is the first recipe I make when avocados have come down in price and the new season macadamias are at their best.
|3||Avocados, halved and stones removed|
|1||Red onion, finely sliced|
|1||Red pepper, seeds removed, finely sliced|
|2 cups||Young watercress|
|6||Fresh dates, sliced|
|1 cup||Macadamia nuts, roasted|
Pomegranate molasses dressing
- Place avocado halves on serving plates. Combine salad ingredients in a bowl.
- Combine dressing ingredients, seasoning to taste. Pour over salad and toss well.
- Fill avocado halves with dressed salad and serve immediately.
