Baked Potato with Summer Toppings
The perfect accompaniament to any summmer dishes, BBQ'S, or a perfect lunch, and a tasty and healthy snack on its own that kids love.
- Pierce potatoes with a fork, about a dozen times all round and the top and bottoms. Place in microwave and bake according to Potato instructions.
- Once potatoes cooked, halve and place slice of cheese (Edam is good and has less fat) on each half. Place under grill to melt cheese - watch carefully as only takes a minute or two.
- Remove from oven and put good amount of coleslaw on top of cheese on each potato half, then follow with a decent dollop of yoghurt (reduced cream can be used). Season and enjoy.
