Te Motu chicken
( SERVES 4 )
This is a family favorite and seems to work everytime. The ingredients all seem to compliment each other nicely.
|3 medium||Kumara, mashed|
|1½ Tbsp||Butter, for kumara|
|4 tsp||Extra virgin olive oil|
|15 small||Button mushrooms, sliced|
|1 glass||White wine|
|1 tsp||Garlic, optional|
|3 tsp||Sweet chilli sauce, more or less|
|1||Parmesan cheese, grated|
|2 whole||Avocados, Sliced|
|1||Salt & freshly ground pepper, to taste|
- Firstly put on kumara to boil. Add oil to a pan, heat and cook chicken breasts, turning to make sure evenly cooked. Add sliced button mushrooms to chicken in pan, cook to colour then add white wine, garlic, sweet chilli sauce, and cream. Then allow to simmer to fully cook chicken as a spicy sauce is created around chicken.
- To serve place chicken on bed of mashed kumara and drizzle with mushrooms and sauce. Place sliced avocado on top of chicken, followed with grated parmesan cheese and salt & pepper to taste.....enjoy! A little patience may be required with stirring to let cream slowly create a creamy sauce.
