Sausage and tomato minestrone

Chuck it all in the slow cooker and come home to a warm and comforting aroma.

Ingredients

1 packet Beef sausage, cut into inch sized pieces
1 medium Leek, roughly sliced
1 medium Potato, roughly diced
2 medium Carrots, roughly chopped
1 can Diced tomato
1 Tbsp Dry mixed herbs
¼ cup Water
1 Tbsp Tomato chutney

To Serve

1 cup Rice

Directions

  1. Combine all ingredients in a slow cooker.
  2. Cook on low for 6 - 8 hours.
  3. Serve with Rice or Pasta.
