Plum sauce (gluten free)
( MAKES approx 8 x 500g jars )
This is a favorite with family and friends, versatile, great with lamb, sausages and chicken, or with a ploughmans lunch.
|3 kgs||Plums, washed|
|1 head||Garlic, peeled & chopped|
|2 Ltr||Cider vinegar|
|2 tsp||Ground nutmeg|
|2 tsp||Ground ginger|
|2 tsp||Ground cloves|
|3 tsp||Rock salt|
|1 tsp||Chilli flakes, or ground chilli|
|1 tsp||Cayenne pepper|
|1 tsp||Freshly ground black pepper|
- Prepare approximately 8 x 500g jars and lids for bottling ( I always prepare more than I think I will use)
- Cool all ingredients in a large pot until tender, sieve to remove plum stones, pour into sterilised jars and cover. Best left for a few weeks before using, keep in a cool dark place, refrigerate after opening.
