BBQ Silver Fern Beef Medallions with chimichurri sauce
This is so simple and easy for a summer BBQ but what elevates it to special is the chimichurri sauce.
- Have medallions at room temperature rub oil in each side and season with salt and pepper. Preheat BBQ
- Place all chimichurri ingredients and quickly pulse - do not puree
- Cook medallions on BBQ 2-3 mins each side and serve with delicious chimichurri sauce and lightly charred flatbreads for dipping into the extra sauce.
