A manly steak recipe, fully of flavour and just a little different.
- Finely slice the onions and sauté over a low heat using a little butter and olive oil. Once cooked add the tsp of brown sugar and caramelise until golden. Set aside. The caramelised onions add a sweetness to offset the bitterness of the sauce.
- Season the steaks with a salt and pepper then rub with a little olive oil. Heat the frypan to very hot, add the steaks and cook to medium rare or your preferred doneness. Remove the steaks from the pan to rest keeping warm.
- Into the hot pan add a cup of the Guiness and reduce by a half, stir in 3 squares of chocolate and the cayenne pepper, add the tbsp of butter and combine. Now taste....add the extra square of chocolate, another pinch of cayenne pepper and more Guiness to taste. Reduce the sauce until it coats the back of a spoon. Strain. It should be smooth and glossy.
- To serve put a couple of tbsp of the sauce on a plate, top with the steak then add the caramelised onion to the top of the steak. Serve with some roasted vegetables of varying colours.
