Beef roast encrusted with kumara chips
I think its really tasty with Kumara chips, fresh herbs from my garden ,nuts and two water cracker biscuits for a twist...
- Preheat oven to 160
- Place fresh Bay leaves in the bottom of an oven bag
- Roll beef in oil,finely chopped garlic and rosemary,salt and pepper
- Crumble Kumara chips,process water crackers,oregano,pistachios,cashews
- Place beef in oven bag coated with crumble mixture and cook for 40 minutes,remove bag and grill until crust is golden brown, serve with roasted potato and minted peas ...
