Pure coconut and lemon muffins

Feel so special to just pick your own lemons from your own garden. I play Tennis Inter-club at Bridge Park Tennis Club at Mangere Bride and have to take a plate for shared lunch with visitors.
- Heat the Oven to 200c fan bake. Line the muffin tin with muffin cases Mix flour with baking powder, Add the sugar with egg , butter and 1/4 tsp Heilala Vanila extract Add the dry ingredients to the liquid and fold gently. Add pure coconut milk, lemon juice and fresh coconut. Combine with wooden spoon . Divide mixture evenly between muffin tins Bake for 10-15 minutes until golden brown.
- Icing: put cream cheese into a mixing bowl. Add icing sugar, heilala Vanilla extract and lemon juice. Mix well. Once muffins cool down. Spread the cream cheese and lemon icing on top of all the muffins. Spread fresh coconut and grated rind lastly on top. Enjoy.
