Pan-seared scallops and crispy bacon salad

This is one of my favourite salad treats and its so simple and easy to make!

Ingredients

6 Scallops
100 g Rindless bacon
½ bag Mixed salad leaves
1 tsp Butter

Salad Dressing

1 Tbsp Extra virgin olive oil
½ Lemon
1 tsp Dijon mustard
0 Salt & freshly ground pepper

Directions

  1. Combine ingredients for the dressing and set aside.
  2. Heat a pan and pan-fry the bacon till crispy. Remove and drain on paper towels. Melt the butter in the same pan till hot and foamy and sear the scallops till opaque and golden brown on both sides.
  3. Arrange the salad leaves on a plate and transfer the cooked scallops on top. Drizzle the dressing over and sprinkle the crispy bacon on top. Easy and delicious!
