Pasta and peanut salad
I'm asked (for every celebration) to make this salad as it's so popular! My late mother started making this many years ago and I've carried it on.
- Boil 3 cups (half a packet) of Macaroni - not overdone: still a little firm-ish, not soft! DRAIN and COOL in a LARGE SERVING BOWL (when cooling, give a bit of a stir so pasta doesn't stick together).
- Add all other salad ingredients: sultanas; celery (diced); capsicums (diced); red onion (finely diced)]. Stir through the pasta.
- Add Mayonnaise just before serving. (must be a spicy brand, e.g. Coleslaw/Potato salad flavour); eg Countdown @500gm jar. Feeds heaps! Keep leftovers refrigerated. To make a bigger serving size - just double/triple ingredients. Can add other coloured capsicums.
