Lemon curd

This is zesty and delicious. I spoon this over puddings or ice cream.

Ingredients

240 g Butter
7 Lemons
400 g Caster sugar
7 Eggs

Directions

  1. Juice and zest the lemons and put aside.
  2. Create a water bath over a pot of water. Keep the element on medium-low so that the water is simmering, not boiling.
  3. Stir the butter and sugar until well combined.
  4. Then add the lemon juice, lemon zest. Make sure you're stirring the whole time. It may look like it has curdled, but give it time. It will form a curd-like texture when it is sufficiently warmed up.
