Sugared flowers: how to make
Delicate sugared flowers are easy to create and they make any baking look gorgeous. Whisk together the white of one egg with a teaspoon of water. Take some pansies or violas, holding the flowers with tweezers or small tongs and, using a soft paintbrush, paint them with the mixture. Next, sweep them gently through a bowl of super-fine sugar (put caster sugar in your food processor and pulse a few times to make this) and finally lay them on greaseproof paper to dry out. This generally takes only a few hours or overnight.
