White fish: how to pan fry
White fish, such as snapper and hapuku, are at their most delicious when kept simple. Heat olive oil in a pan until it's simmering hot. Season the fish with salt and pepper at the last minute before dipping each piece in flour. Next, add a knob of butter to the pan and place the fish on the butter just as it begins to melt. Cook fish on each side until browned. Thicker pieces of fish will need a few minutes in the oven after browning.
