Sausages: how to cook
To avoid sausages forming a tough skin when cooked, put sausages into a pot of cold water and turn it off the instant it starts to boil. Drain, then grill or barbecue. A barbecue is a grill, as long as you’re cooking on a hot plate. This will only work for real sausages from a decent butcher. If you are buying processed meats and sausages they are designed to go straight onto the barbecue.
