Cashew butter: How to make
It takes a lot of work to grind cashew nuts in to butter and it’s very hard on the engines of food processors or blenders so we advise caution here. Use a machine with a powerful motor. We’ve made it successfully in the Vitamix.
Step 1: You need to use a large quantity of raw cashew nuts to ensure there’s enough bulk for the blades to grip on to. We used 4 cups.
Step 2: Pour the cashews in to the Vitamix and start on a low setting. Taking it higher when it feels right. Use the tamper to push the nuts down on to the blades. You will feel the blades may get stuck as the cashews turn into a very thick paste.
Step 3: Stop every few seconds and spoon the paste away from the blades. Continue doing this until you have a smooth buttery paste. This can take a good 5 minutes or so depending on your machine.
Step 4: Spoon the cashew butter out in to a jar and store in the fridge.
