Lap cheong (also lup cheong)
A pinkish, dried, sweet-salty Chinese sausage that comes in many varieties. However, pork is the most popular meat used. Sometimes the sausage will contain duck or pork liver which makes for a darker colour. The smoked sausages are usually bought in New Zealand vacuum packed and don't require refrigeration until the pack is opened. They freeze well, too. Lup cheong (also called lap cheong or lap chong) contain nuggets of fat and are delicious sliced and cooked into rice dishes.
