Wakame is a form of edible seaweed, often used in Japanese dishes such as miso and noodle soups and salads. The fronds of the sea vegetable are blanched, cut and freeze-dried.
Tasting of the sea, with a slightly sweet flavour, it has a silky texture and is added to soups and salads.
Often sold dried, it needs to be reconstituted in warm water, added straight into a soup. Be careful not to use too much as the pieces expand greatly in size when softened.
