A spicy Korean paste made from red chilli and glutinous rice, fermented soybeans and salt. Very pungent, it adds a deep red colour to dishes and is one of the most beloved flavourings in Korean food. Widely used in many dishes, including bibimbap (rice with seasonal vegetables often with a raw or fried egg and sliced meat) and bibimguksu (cold noodles and vegetables). Also used in stews, with fried foods and salads. Available in some supermarkets and in Asian food stores.
