Soba noodles

Soba noodles

Long, slendfer noodles made from buckwheat flour. Soba noodles have a nutty flavour and are either served cold with a dipping sauce or hot in soup. Some also have wheat flour as well as buckwheat flour in them so check labels if you need gluten-free. Brown soba noodles are made in varying shades of brown. the darkest (yabu soba) are made from the whole grain and the palest (gozen soba) from the kernel. these are the most prized. Others are pale green. Known as chasoba, they are flavoured with green tea.
