Rice vinegars are made from fermented rice and are used in Japanese and Chinese cuisines. The Japanese rice vinegars are commonly used to flavour plain rice for sushi or similar dishes and are golden in colour. They are not as strong as their Chinese counterparts and are considered very mild and sweet by comparison. However, Chinese rice vinegars are sweeter than our malt and wine vinegars. There are three main types: black (richly flavoured), red (mild and slightly sweet) and white (mild and sweet).
