Dr Libby on brown rice balls
These brown rice balls are a nutritious snack to have on hand and are great for school lunch boxes, providing a sustained release of energy. Tahini (sesame seed paste) adds to the nuttiness and helps the rice to stick together as well as providing calcium.
With hundreds of snack food items available it is often difficult to make a nourishing choice. Making your own in advance is the best kept secret for your pocket and your health. This recipe is seriously easy to make, especially if you leave them raw. As the weather cools they are lovely pan-fried until they are a little crispy.
You can experiment with the vegetables you use; I find the spring onion adds a milder flavour than onion. They are a delicious way to use up leftover brown rice.
